Pani puri is one of the most interesting street foods I had in India. It refers to a popular type of chaat made with crispy hollow balls called puri. Preparations vary by region but they’re typically filled with a mixture of flavored water, tamarind chutney, mint chutney, chaat masala, green chili, onions, chickpeas, and potato mash. It’s popular throughout India where it goes by different names like puchka, gol gappa, fulki, pakodi, and gup chup. Mumbai was my favorite city in India and much of that has to do with the food. To prepare, urad lentils are soaked overnight and ground into a batter before being deep-fried. They’re then soaked in water and drained before being covered in a thick beaten yogurt sauce.
